Oaxaca 

Oaxaca [pronounced Wuh-HAH-kuh] is a semi-soft white cow’s milk cheese from Mexico. Like Mozzarella, Oaxaca cheese is produced using the pasta filata method of stretching the curd, then kneading it into long ribbons gently wound into balls. An artisanal cheese, Oaxaca has a mellow buttery flavor and is a superb melting cheese.
